I’m loving the weather at the moment, we’ve been having some kind of heat wave, and I’m lucky enough that
1) My job is active and I can go outside whenever I want to as we have a garden at the Nursery.
2) I now have 2-3 weeks off before I start my next job
So I can enjoy the weather (providing it continues).
I was looking for something to make a couple of weeks ago. I wanted to bake, the will was there, but I just couldn’t bear the thought of turning the oven on. Then I found this:

My plan was to bring these in to the lovely ladies at work. So rather than make a loaf, that would need cut into, I made them into cupcakes instead, so they would be individual portions.
(As it turns out, the weather turned wet and a bit colder, so nobody was in the mood for frozen treats).
I followed the recipe exactly, using the same amount of fruit and yoghurt (and ended up with about 18 cupcakes).
I prepared all my fruit beforehand, I love the look of all that fresh fruit! So summery.
Then I blended them, in order, with the soy yoghurt.
I poured the mix into my brightly coloured summery bowls.
Then I layered them into my silicone cupcake cases, freezing after each layer went in (just for 10 minutes or so). And for some reason I ran out of raspberry before any of the rest.
This is a fruity, creamy, cool treat that I really enjoyed. The fruit was quite tangy, which Husband did not enjoy. But I liked it, and it was balanced a bit by the banana. If you are not keen on tangy fruit, maybe take one out and add another banana layer.
Delicious and summery.
