I haven’t really been challenging myself too much recently, and have been going back to old recipes that are tried and tested that I love.
This time I decided to make marbled banana loaf and my friend’s fruit loaf recipe, although I made a couple of changes to the fruit loaf recipe, as someone I was making it for is gluten intolerant.
The chocolate banana loaf recipe comes from the ppk, and I always follow it exactly, because it always works and tastes amazing and everyone always enjoys it and this time was no different. Plus it gives me a use for those last bananas in the bunch!
The second loaf I made was from a recipe my Friend got from her Grandmother. I like it because it is so simple, but it’s never turned out the same any time that I’ve made it, and I’ve made it a few times.
The recipe is 1 cup each of Self Raising Flour, Milk (I use Soy), Sugar (although I use 2/3 of a cup), AllBran and Dried Fruit.
This time I used Gluten Free Self Raising Flour, and my cup of dried fruit was made up of a quarter cup each of raisins, sultanas, cranberries and mixed peel.
Bake at 180C fan for about 40 minutes.
Surprisingly this was my favourite version of the fruit loaf. The flavour of the fruit was varied and sweet, and this is the fluffiest the loaf has ever been. It was also very popular, and I had none left to take home.
I know that these don’t challenge me too much, having made them many times before, but there is a reason I make them so often, and there is a very good chance that you will see them on here again.
